Another must for the absinthe connoisseur, these balanciers as they are officially called, are used for adding iced water to a single shot. Absinthe is drank by slowly adding cold sugared water to a measure. As it slowly drips it releases the oils of fennel, grand wormwood and anise. The usual ration is one part absinthe to 3-5 parts water.
The balancier is placed on the rim of a glass and suspends over a spoon holding the sugar. The water drips out in a see-saw motion to distribute it across the cube.
